Our Wines

At Cooby Wines we focus on producing small volumes of the finest wines. This allows us to focus on quality and handcraft something special for your enjoyment. Ripe grapes, the best yeasts and the finest quality oak is always used.  Minimal chemicals and preservatives are used throughout the process to maximise varietal flavours. You can't make great wine from poor grapes so we focus on growing the every best grapes possible. At Cooby Wines not only do we grow all our own grapes we make all wines at Cooby in our boutique winery on the property.

2010 Cellar Reserve Shiraz - Six pack

A well balanced medium bodied wine that has been matured in French oak for 24 months.
This wine has rich and ripe berry characters and good oak maturation. 
This wine has been bottled aged in the cellar for 5 years for special release . It is drinking perfectly now but can be aged further if desired.

This wine has rich and ripe berry characters and good oak maturation. 

This wine has been bottled aged in the cellar for 4 years for special release . It is drinking perfectly now but can be aged further if desired.

We always harvest very early in the morning to produce the freshest juice possible. Grapes are picked and immediately pressed as we don't like to allow contact with the skins. After fermentation we usually leave the juice on lees and regularly stir for several weeks (a process called batonnage ). Depending on the desired style I usually encourage the wine to go through malolactic fermentation to give the wine more weight and decreased acidity.
